I challenge all of you to think consciously before you eat to help celebrate the diversity of food we have in this country. Realize where your food comes from, how it was farmed, it's impact of carbon footprint, and it's delivery of optimal nutrition. Choose local, organic unprocessed foods more often and pre-plan your daily meals.

• Start, support or get involved with local community garden projects to grow fresh fruits, vegetables and herbs
• Work with your local school board to create ways to showcase local foods either in the classroom or in the school cafeterias
• Ask your grocery store to carry more local foods.
